I'm currently employed by a company which has 1 week left on the contract and I have just joined another company. So technically I am employed by both companies for one week. Is it possible for my current employer to find this out due to taxes and such?
Or is the only way they would find out if I or someone else told them?

Need to know country/state and what industry as it will vary. Do you have a reason to believe they will conduct a complete and intrusive background check and do they have the authority to access your personal tax details? Short answer: probably not.

i highly recommend you edit question to something like "here is the situation, what is the most professional way to achieve X" where X is what you want. Right now your questions is company-specific
