Emulgatori su supstance koje smanjuju površinski napon omogućavajući stvaranje stabilnih emulzija. Emulzije dobijene bez upotrebe emulgatora se nazivaju pseudoemulzije.[1]


Emulgatori mogu biti prirodni (lecitin, holesterol), ili veštački.
